No longer dreaming of a white Christmas (who does that in Florida?!) but more like dreaming of this delicious granola with a similar flavor profile to a seasonal coffee.
While this granola does contain caffeine, you could try substituting decaf hazelnut coffee or decaf hazelnut instant coffee (see note in the recipe about coffee types) if you are sensitive to or avoiding caffeine.
Also, this granola contains finely ground coffee. Yes, that’s probably weird. No, you (shouldn’t) feel like you are chewing on coffee grounds. Grind the coffee finely (like espresso or instant coffee) and you’ll get the flavor without the grit.

The Truvia sweetener you are looking for is in a small plastic jar. Please don’t buy the giant package without at least checking the ingredients first – often the larger packages contain sugar, or are cut with a less Trim Healthy Mama friendly sweetener.
If you don’t have or can’t find the sweetener used in the recipe, I often use the Trim Healthy Mama sweeteners interchangeably. You could substitute either Gentle Sweet or Super Sweet in equal parts, depending on how sweet you want your granola. If you want the sweetness to be more subtle, I’d suggest Trim Healthy Mama Gentle Sweet sweetener.

Notes:
If you are a crunchy granola person (who isn’t?!) then cook your granola low and slow like the recipe directs. If you prefer slightly chewy granola, then a more quick method is the one for you – see the recipe notes for chewy granola directions.
This recipe is slightly over fat limits for a Trim Healthy Mama E meal, but not by much. If it bothers you, reduce your serving size slightly to be well within fat limits.
Bonus: this recipe is oil free and sugar free. Many granola recipes use oil for the liquid, but not this one. This one has plenty of protein instead, from egg whites and protein powder.
If you are dairy-free, you could try using collagen in place of the protein powder, or substitute a Trim Healthy Mama friendly dairy-free protein powder, although I’m not sure what that may be.
White Christmas Dreaming Granola
Ingredients
- 3 c old fashioned oats
- 3/4 c whey protein powder unflavored
- 1 tsp salt
- 1/4 c Truvia sweetener
- 2 tbsp finely ground hazelnut coffee grounds NOT BREWED
- 1/3 c plain, raw hazelnuts shelled
- 1/3 c shredded coconut unsweetened
- 1/4 c egg whites I used carton
- 1/4 c almond milk original, unsweetened
- 2 tsp caramel extract
- 1 tsp vanilla extract
Instructions
- Preheat oven to 300° F.
- Line a cookie sheet with foil and set aside.
- In a medium bowl, combine all dry ingredients, including the coffee grounds, and give a quick stir just so everything mixes up nicely.
- Add the egg whites and almond milk and mix until just combined.
- Stir in the extracts and mix well.
- Dump the oat mixture onto the foil lined cookie sheet, and bake for 45 minutes or until the oats start to brown and the hazelnuts are roasted¼.
- Enjoy!
