As the person who will make Trim Healthy Mama desserts and love the flavor, but let them sit, ignored in the refrigerator… let me say, it’s a texture issue. Not with this overnight soaked pumpkin bread! There is nothing wrong with the healthy treats; in fact, when you don’t have unhealthy treats for a long time, you can adjust. The issue comes when you are exposed to unhealthy treats over and over and begin to miss the texture of traditional baked goods.
When soaking certain types of flour began popping up all over the Trim Healthy Mama communities, I was intrigued.. but too nervous to jump on the bandwagon.
After trying this soaked pumpkin bread however, it’s safe to say I’m a convert!

Before Trim Healthy Mama I had never heard of kefir, so I’m marking it under “special ingredients”.. but you can technically purchase it at your local supermarket (in most cases). Ideally you would have double fermented your kefir, but truly, for this recipe I didn’t bother.
A true blue special ingredient is the whole grain Einkorn flour… I had to specially purchase mine off of Amazon.
An Important Note on Fuel Types…
- For fuel pull (FP): Make sure to use double fermented kefir and eat no more than one slice of bread (with each of the two loaves yielding 10 slices). Walnuts and raisins are within the limit. Enjoy!
- For carbs fuel (E): Use double fermented kefir and enjoy a couple of slices of bread with the recipe as written (the walnuts and raisins fit within the limit if you cut each loaf to yield 10 slices).
- For a crossover (XO): You don’t have to double ferment your kefir. Make recipe as written.
Easy Peasy Soaked Pumpkin Bread
If you like easy, this recipe is for you… because I have a newborn and a toddler and was still able to throw it together in a short amount of time.
The hardest part is waiting for the flour to soak overnight, but if you mix it and go to bed even the wait is enjoyable!
No more missing traditional textures… my sugar loving mother-in-law was so impressed with how this bread turned out, and my toddler practically inhaled it.
Pumpkin not your jam or waiting for your Einkorn flour to arrive? While I’m in the process of creating more soaked recipes, try this Blueberry Banana Oat Bread… no special ingredients needed, this is more of a quick bread style recipe and you don’t have to wait nearly as long for this THM E recipe.
Overnight Soaked Pumpkin Bread
Ingredients
- 2 2/3 c whole wheat Einkorn flour
- 2 c low fat kefir double fermented (preferred for fewer carbs)
- 1 c pumpkin puree
- 1/4 c butter salted, melted
- 3/4 c Truvia spoonable jar variety
- 2 eggs large
- 2 tsp baking soda
- 1/2 tsp baking powder aluminum free
- 1 tsp cinnamon ground
- 1/2 tsp cloves ground
- 2/3 c walnuts chopped (optional)
- 2/3 c raisins (optional)
Instructions
The Night Before
- Mix your Einkorn flour and double fermented kefir, and soak 10-14 hours or overnight. Cover and let sit at room temperature.
The Next Day
- Preheat oven to 350°F
- Add remaining ingredients to soaked flour mixture.
- Divide into two greased loaf pans, and bake for 30-45 minutes or until done.
- Yield 2 loaves of 10 slices each. Enjoy!!
Notes
- Technically this pumpkin bread is one carb over the fuel pull limit, and as such could be considered to "squeak by" as a fuel pull, but I'm calling it an E fuel to be on the safe side (and if you eat more than 1/20th of the recipe - if each loaf yields 10 slices and you eat more than one slice - then you would be in E territory).
- Please keep in mind that if you do not double ferment your kefir, use walnuts AND eat more than a slice of pumpkin bread, you are approaching crossover territory.
