Time to confess … I’ve been holding out on you. This recipe was actually developed more than a year ago two years ago, but I never got around to photographing it – it was eaten too quickly – and thus, I enjoyed this raspberry walnut muffin without sharing.
Now that we’ve cleared the air, let me tell you a bit about this recipe.
It’s Trim Healthy Mama friendly, low carb, oil free, and refined sugar free … but oh so delicious!
The recipe could probably be adapted for an oven, instead of a microwave, if you had the motivation … but I have not tested that method. It could also probably be made in a toaster oven. If you test one of these methods, please let me know in the comments below!

– Microwaves with different wattage will need different cooking times. I have tested this recipe (and provided cooking times for) a 700 watt and a 1.65 kw microwave. The latter is the primary time, and the 700 watt time is in the notes section.
– Fresh or frozen raspberries can be used. If you use frozen, it may take an additional 15 seconds or so. Start with the suggested time and add a little more time if needed.
– Greek yogurt can be substituted for the sour cream.
– If using a homemade Trim Healthy Mama baking blend (as I am), then please note that the quality and color of oat fiber (the primary ingredient in baking blend) varies wildly. Although I usually use Trim Healthy Mama brand oat fiber, recently I have used a different brand due to availability and it has a more yellowish color – not white like the THM brand. However, the taste is still neutral and it’s very affordable for a good sized amount.
Raspberry Walnut Muffin in a Mug:
This recipe is single serve, for the mamas out there who really want to stay on plan, but their families, or significant other, or who ever refuses to eat the healthy foods they cook.
Prepped and cooked in less than 10 minutes, this recipe is ideal for those hectic mornings where you just want to grab an (unhealthy) muffin, but know you owe your body better.

Raspberry Walnut Muffin in a Mug
Ingredients
- 1 egg large
- 1/4 c Trim Healthy Mama baking blend
- 1/2 tsp baking powder aluminum free
- 1 tbsp sour cream
- 2 tsp Truvia sweetener
- 1/4 c raspberries fresh or frozen
- 1 tbsp walnuts chopped
Instructions
- In a microwave safe mug, mix the egg, baking blend, baking powder, sour cream and Truvia.
- Once well mixed, add the raspberries and walnuts and stir.
- Microwave, uncovered, for 1 min 30 sec or until top is nearly dry to the light touch.
