Ordinary sugar cookies tend to be overly sweet and lacking in flavor. Not these babies! With the texture of a soft sugar cookie and a bold chai flavor, these chai sugar cookies are a healthy way to soothe that cookie craving.
After the holidays and all of the (unhealthy) treats, I was desperate to hop back on the healthy bandwagon. Nothing like putting ON weight over the end of year holidays to make weight loss a priority in the new year!
There were regular flour and sugar cookies on the table, but not only were they not for me, unhealthy cravings don’t go away if you keep feeding them.
Since healthy “sugar” cookies are already a thing, this delicious variation was born. It has a soft, almost cake-like texture, and rises beautifully in the oven. It’s also loaded with bold chai flavor.
I did use regular chai tea in the making of these chai “sugar” cookies, which contains caffeine. You could use decaf chai tea, or simply substitute water for a less intense chai flavor.
Love chai, but don’t want to eat it in cookie form? Try this creamy low carb, low fat chai tea latte.
I used xylitol because:
a. that’s what I had on hand and
b. it mimics sugar nicely – especially for rolling the outside of the cookies
If you are uncomfortable using xylitol, or prefer not to use it, you can substitute another low glycemic sweetener such as erythritol (be warned, this does tend to have a cooling effect) or try a sweetener such as Trim Healthy Mama gentle sweet.
Xylitol IS poisonous to dogs, so please use with caution, especially if you have fur babies around.
