Ready for a “fresh tasting” avocado tuna salad that’s not only a THM E (healthy carbs) but quick to make, with no cooking needed?
Don’t be intimidated by the ingredient list – there are only five major ingredients and the rest are either spices or seasonings. Easy!
You literally just mince the cucumber, mix this up in a bowl and enjoy – and it serves two, so you can have a meal ready for the next day, or feed a loved one. Your choice 😉 .
There are raisins in this recipe, but they aren’t required … so if you want to lessen the amount of natural sugars or the carbs, then feel free to omit them. They are delicious pops of sweetness in this avocado tuna salad, though.
This recipe first came about approximately four or so years ago, in the kitchen of a house my husband and I were renting with a roommate.
Although it’s undergone a few revisions since then, my roommate and I as well as a friend were trying to eat healthier, while staying on a budget.
With not much time before our landlord came over to replace the garbage disposal, we concocted this delicious tuna salad recipe. With a dash of this and a little of that, avocado tuna salad came to life.
The original version had no measurements, and included hot sauce.
Although there is no longer hot sauce in the recipe (feel free to include it if your heart so desires) measurements have since been added 🙂 .
